Althaea officinalis is the true marshmallow plant from which the original marshmallow confectionery was made. Marshmallow is traditionally made from the dried roots of the plant. The plant has medicinal properties both internally and externally. It is mainly used for its soothing properties. The flowers and young leaves can also be eaten. The roots emulsifying properties are also used for cleaning Persian carpets in the Middle East.
Marshmallow is a herbaceous perennial growing best in moist fertile soils. Stiff flower stalks grow up to 1.5 meters during summer. Gorgeous soft pale pink/ mauve flowers form a long the stem, and are loved by bees.
Plants should be grown for at least 2-3 years before harvesting the roots. Plants can be lifted and divided in the winter, with some roots removed at this stage.
